About the chef

Chef Grayson Pilar learned to cook from her abuela and seeks to bring her nostalgia surrounding Spanish cuisine to the table to share with friends and family.

Grayson has studied food in Spain and worked an internship at Galicia’s only 2 Michelin star restaurant.

The restaurant was named after Grayson’s aunt, MariPili.

“The biggest opening in Seattle
to look out for is MariPili Tapas Bar”

The new Spanish restaurant looks to slide right into the neighborhood serving dishes like grilled octopus with broccoli and savory Galician flan, among bigger plates like bacalao with manchego gnocchi. The chef draws on her family ties to the Galicia region in Spain—with both the menu and the fishing nets that will hang from the ceiling.
